What is Groundnut Oil?

Groundnut oil, also known as peanut oil, is derived from the seeds of the peanut plant (Arachis hypogaea). It is widely used in cooking and food processing due to its mild flavor and high smoke point.

 

Groundnut oil is primarily composed of about 50% monounsaturated fatty acids, predominantly oleic acid, and around 30% polyunsaturated fatty acids, mainly linoleic acid (an omega-6 fatty acid). It also contains approximately 20% saturated fatty acids, including palmitic acid and stearic acid. Additionally, groundnut oil is a source of vitamin E, including tocopherols and tocotrienols, which provide antioxidant benefits. This composition contributes to its stability, high smoke point, and versatility in cooking, while also offering potential health benefits such as improved cholesterol levels and enhanced nutrient absorption.

Steps of Mustard Oil Refining Plant

  • Step 1

    Degumming

    Water is added to the crude groundnut oil to hydrate the phospholipids (gums), which are then separated through centrifugation, improving the oil quality by removing unwanted impurities.

  • Step 2

    Acid Gum Conditioning

    Phosphoric or citric acid is introduced to treat non-hydratable phospholipids, aiding their removal during the next stages of refining and improving the overall efficiency of the refining process.

  • Step 3

    Alkali Neutralization

    The oil is treated with an alkali solution, typically caustic soda, to neutralize free fatty acids and convert them into soap stock, which is then separated, leaving behind cleaner oil with improved taste and longer shelf life.

  • Step 4

    Bleaching

    Activated bleaching earth or clay is added to adsorb unwanted color compounds, trace metals, and impurities. The oil is then filtered to produce a bright and clear product.

  • Step 5

    Deodorization

    The oil is subjected to steam distillation under vacuum conditions, which effectively removes free fatty acids, volatile compounds, and odor-causing substances. This results in a neutral-smelling, high-quality refined groundnut oil.
