What is Mustard Oil?

Mustard oil is a vegetable oil derived from the seeds of the mustard plant (Brassica species). It is popular in South Asian cuisine and known for its strong, pungent flavor and distinct aroma. The oil is commonly used for frying, sautéing, and pickling.

 

Mustard oil is composed of approximately 60% monounsaturated fatty acids, primarily oleic acid, and about 20% polyunsaturated fatty acids, including alpha-linolenic acid (an omega-3 fatty acid). It contains around 10-15% saturated fatty acids, such as palmitic and stearic acids, and includes notable amounts of erucic acid, particularly in certain varieties. The oil also contains bioactive compounds like allyl isothiocyanate, which contribute to its distinctive pungent flavor and potential health benefits. Mustard oil’s balanced composition provides it with a high smoke point and versatility for various culinary applications.

Steps of Corn Oil Refining Plant

  • Step 1

    Degumming

    Water is added to crude mustard oil to hydrate phospholipids, allowing them to be separated through centrifugation. This step reduces impurities and improves the quality of the oil.

  • Step 2

    Acid Gum Conditioning

    Phosphoric or citric acid is added to treat non-hydratable phospholipids, facilitating their removal in later stages and improving the efficiency of the refining process.

  • Step 3

    Alkali Neutralization

    An alkali solution, typically caustic soda, is mixed with the oil to neutralize free fatty acids, forming soap stock. This process also removes other impurities, improving the oil’s taste, shelf life, and overall quality.

  • Step 4

    Bleaching

    Activated bleaching earth or clay is added to the oil to adsorb unwanted pigments, trace metals, and oxidation products. After mixing, the oil is filtered to produce a bright and clear product.

  • Step 5

    Deodorization

    The oil is subjected to steam distillation under vacuum conditions to remove free fatty acids, volatile compounds, and odor-causing substances. This process results in a neutral-smelling, high-quality refined mustard oil.
