CBE is produced by fractionating and blending vegetable fats like palm and shea butter. Processes such as hydrogenation and deodorization are employed to mimic the properties of cocoa butter.

Lecithin is a phospholipid mixture used as an emulsifier. It’s extracted from oils through degumming and can be further modified through hydrolysis or drying to produce liquid or powdered forms.
